Gluten Free Red Velvet Cupcakes
I absolutely love anything red velvet, it is my favourite cake flavour. As everything in my family has to be made gluten free, I decided to tweek it slightly to make it work with gluten free flour. I had to make it a few times to make it perfect, and I am now ready to share the recipe.
9- When the cupcakes are completely cold, you need to pipe a butter cream that you have either made or bought. I bought mine because I didn't have time to make it.

Ingredients;
- 150g of caster sugar
- 1 egg
- 60g of butter
- 150g of gluten free plain flour
- 1/2 teaspoon of baking powder
- 120ml of milk
- 20g of cocoa powder
- 2 teaspoons of lemon juice
- 1/4 teaspoon of christmas red food colouring gel
1- Firstly you need to get all your ingredients out, pre heat your oven to 180 degrees celsius and put the cupcake cases into the muffin tin.
2- Then put the butter and the sugar in a bowl and whisk it with either a hand whisk or a kitchen aid until its mixed together completely.
3- Whisk in the egg and then stir in the red food colouring gel.
4- Sift in the cocoa powder, baking powder and half of the flour into the mixture.
5- Add in the milk and the lemon juice.
6- Finally add in the rest of the flour and mix in completely, creating a smooth thick mixture.
7- Now you have to use an ice cream scoop to put the cupcake mixture into the cases about 2/3rd's full.
8- These need to be put on the middle shelf of the oven and be baked for 20 minutes or until a skewer comes out clean
