Gluten Free Funfetti Cupcakes

If you are a Zoella fan you may have seen her recent video when see made funfetti cupcakes. As everything in my family has to be made gluten free, I decided to tweek it slightly to make it work with gluten free flour. I had to make it a few times to make it perfect, and I am now ready to share the recipe.

Ingredients;
  • 125g of caster sugar
  • 2 eggs
  • 125g of butter
  • 125g of gluten free self raising flour
  • 1/4 teaspoon of bicarbonate of soda
  • 1 1/2 teaspoons of milk
  • 1/4 teaspoon of vanilla extract
  • LOTS of sprinkles
1- Firstly you need to get all your ingredients out, pre heat your oven to 170 degrees celsius and put the cupcake cases into the muffin tin.

2- Then put the butter in a bowl and whisk it with either a hand whisk or a kitchen aid if your lucky enough to own one.

3- Mix in the sugar, flour and the eggs.

4- Once it has all been mixed together, its time to add the sprinkles.

5- Now all you have to do is use an ice cream scoop to put the cupcake mixture into the cases about 2/3rd's full.

6- These need to be put on the middle shelf of the oven and be baked for 20 minutes or until a skewer comes out clean.

7- When the cupcakes are completely cold, you need to pipe a butter cream that you have either made or bought. I bought mine because I didn't have time to make it.

8- After you have iced the cupcakes put a pinch of sprinkles on top of them.

If you make these please tag me in the photos. THESE CAKES ARE SOOO YUMMY.

Thankyou for reading, hope you enjoyed this.

Lots of love,

Beth
